First Day of Snow

Do any of you have traditions that go along with the first snowfall that accumulates?  Our tradition is a day off of school.  The kids go out and play and play and play.   Then, it is time for hot chocolate while all of their outdoor gear dries out.   Bob takes them out again in the evening for a snowball fight/building snowmen.  I think we had 4 snowmen built in one day.   While they are all outside it is our tradition for me to make homemade onion rings.   It is a HUGE mess and very time consuming but it is worth it to hear them all exclaiming what a good cook I am!  : )  ( Sophie calls me a “baker woman” – gotta love 4 year olds!!! )    Thought I would share some of those pictures and post my recipe.   The snow all melted but just yesterday we got some more and in the next 4 days we are supposed to get about 8 inches.  We are all thrilled!   I am just as excited as the kids to get out our sleds and go to our favorite hills.

This is the best I could get of all of them … it was BLACK outside.

Now for the onion rings …

Old Fashioned Onion Rings

  • 1 large onion, cut into 1/4 inch slices
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1 cup milk, or as needed
  • 3/4 cup dry bread crumbs
  • seasoned salt to taste
  • 1 quart oil for frying, or as needed

Directions

  1. Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  2. Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  3. Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  4. Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.
I doubled dipped the onion rings in the egg and milk mixture – had to make more mixture.  This is why it took quite a long time to make these.    And now as I am posting this I remember that we had an appetizer party here last month and I made jalapeno poppers that turned out quite delicious.    Can’t wait for Super Bowl night!!

  2. Hey, Heather! I’m glad to see you blog again. I’ve missed your posts. You always inspire me. On our first snowfall day here the boys played outside, came in for hot cocoa, went back out, came back in for more hot cocoa, etc. . . . It was an all-day thing and they probably had more cocoa than they needed, but it was fun to watch them enjoy the snow so much.
